The Aude & its Treasures

In the early hours, the City of Carcassonne reveals itself almost silent, before the crowds arrive. Its double ramparts, stone towers and fortified gates tell centuries of history, spanning Gallo-Romans, Visigoths and medieval builders. Walking along the lists, the family grasps the sheer scale of this fortress, the largest fortified medieval city in Europe still inhabited today.

Perched on a rocky spur overlooking the valley, the castles of Lastours form a unique group of four Cathar fortresses aligned along the same ridge. Each one bears its own name and history, witnesses to the siege of this region during the crusade against the Cathars. From the ridge path or the viewpoint, the view takes in all four stone silhouettes standing out against the sky.

After the stone of the fortresses, it's time for the bowels of the earth: the Cabrespine chasm is one of the largest chasms open to the public in Europe. A suspended footbridge lets you gaze down into this immense abyss adorned with concretions, where stalactites and stalagmites bear witness to water's patient work over millions of years. The cool, damp air, the mineral silence and the play of light give this place an almost mysterious atmosphere.

To end the day gently, the family heads to the shaded banks of the Canal du Midi, listed as a UNESCO World Heritage site. Centuries-old plane trees, stone locks and slowly gliding barges offer a soothing contrast to the perched fortresses visited earlier. It's the perfect chance to stroll on foot or by bike along the banks and watch how a lock works.
